Strawberry Preserves - Quick and Delicious

Strawberry Preserves A little something sweet   I've been asked several times to share my  strawberry preserve recipe.  I always get frustrated with having to scroll through pictures to get to the recipe - so here it is up front!  Ingredients: 2 pounds of fresh or frozen strawberries (if using fresh wash and trim) 1 cup of sugar 1 large lemon (about 1.5 TBSP of lemon juice)  Steps:   Macerate the strawberries in sugar - overnight or for several days Pour all the strawberries into a nonreactive pot and scrape the sugar into the pot  Add lemon juice Bring pot to a boil for 15-20 minutes - keep an eye on the pot, this will foam! Remove pot from heat Using an immersion blender pulse through the ingredients until your preferred smoothness Return pot to heat for 2 minutes
