Strawberry Preserves
A little something sweet
I've been asked several times to share my strawberry preserve recipe. I always get frustrated with having to scroll through pictures to get to the recipe - so here it is up front!
Ingredients:
- 2 pounds of fresh or frozen strawberries (if using fresh wash and trim)
- 1 cup of sugar
- 1 large lemon (about 1.5 TBSP of lemon juice)
Steps:
- Macerate the strawberries in sugar - overnight or for several days
- Pour all the strawberries into a nonreactive pot and scrape the sugar into the pot
- Add lemon juice
- Bring pot to a boil for 15-20 minutes - keep an eye on the pot, this will foam!
- Remove pot from heat
- Using an immersion blender pulse through the ingredients until your preferred smoothness
- Return pot to heat for 2 minutes
