Strawberry Preserves - Quick and Delicious


Strawberry Preserves

A little something sweet

 

I've been asked several times to share my  strawberry preserve recipe.  I always get frustrated with having to scroll through pictures to get to the recipe - so here it is up front!


 Ingredients:

  • 2 pounds of fresh or frozen strawberries (if using fresh wash and trim)
  • 1 cup of sugar
  • 1 large lemon (about 1.5 TBSP of lemon juice) 

Steps:

  1.  Macerate the strawberries in sugar - overnight or for several days
  2. Pour all the strawberries into a nonreactive pot and scrape the sugar into the pot
  3.  Add lemon juice
  4. Bring pot to a boil for 15-20 minutes - keep an eye on the pot, this will foam!
  5. Remove pot from heat
  6. Using an immersion blender pulse through the ingredients until your preferred smoothness
  7. Return pot to heat for 2 minutes
